1–4 · The reliables

Peppers, onions, zucchini, mushrooms are the basket’s starting lineup — they love high heat, char predictably, and make the classic fajita-night mix. Toss with olive oil, salt, and smoked paprika; finish with lime. Mushrooms drop a lot of water in the first minutes — keep rolling and it evaporates into concentrated, meaty flavor.

5–6 · The blister club

Shishitos and green beans want fierce direct heat and constant motion — exactly what the basket does best. Blister until spotted black, then hit them with flaky salt and a squeeze of lemon. One in ten shishitos is spicy; that’s the game, not a defect.

7–9 · The par-cook crowd

Broccoli, cauliflower, and baby potatoes are too dense to grill from raw before the outside burns. Give florets 2 minutes of steam and potatoes an 8-minute boil, dry them well, then char. Potatoes + rosemary + garlic oil in a rolling basket is the side dish people text you about later.

10–12 · The finishers

Corn chars into smoky-sweet popcorn energy — cut kernels in fat slabs so they don’t slip through, or run wedges of cob. Fennel caramelizes into something almost candied; keep the core on so wedges hold. Cherry tomatoes go in for the final 3–4 minutes only — you want blistered-and-bursting, not sauce.

Three finishing moves that work on everything

The acid: lemon, lime, or a teaspoon of red-wine vinegar the second food leaves the basket. The fat: butter, tahini, or a soft cheese melting on contact. The crunch: toasted nuts, breadcrumbs, or fried shallots. Char + acid + fat + crunch is the whole formula behind every $14 restaurant side.

What about fruit?
